Arabaiana fish with pollen crust and sweet potato puree with beeva atlantic forest wild honey
- Ingredientes:
- Portions: 2
- 400g of fish loin (sea bass, arabaiana or golden);
- Salt and black pepper to taste;
- 5g butter;
- 10ml olive oil;
- garlic clove
- Crust:
- 50g butter at room temperature
- 50g of breadcrumbs
- 50g of pollen
- Salt and black pepper to taste
- Preparo:
- Crust: Mix all ingredients. On a cutting board, spread the dough between two sheets of wrapping paper. Take to the freezer to stiffen.
- Fish: Preheat the oven to 200ºC. Season the fish with salt and pepper. In a non-stick frying pan, preferably with oil, butter, and garlic clove, brown the fish for 5 minutes. Place the fish in a refractory smeared with olive oil. Cut the crust to the size of the fish and overlay it. Bake it for 10 minutes. Serve immediately.
- Accompanying suggestion: Sweet potato puree with ginger and honey beeva.
