Honey of the Atlantic Forest: get to know the characteristics and indications of use

Honey is a bee product whose main function is to feed the hives. To produce it, bees need to collect floral nectar from vegetation close to where they live. Because of this, the result can vary from region to region, since the nectar influences the taste and physical-chemical properties.

The Atlantic Forest honey, for example, come from a diversity of plants in the biome, which is present in 17 Brazilian states and occupies about 13% of the national territory. This extensive occupation highlights its importance in environmental terms and also allows the generation of jobs and income for the populations that live in its surroundings. Honey extraction is one of these sources of survival.

Arabaiana fish with pollen crust and sweet potato puree

Ingredients

For fish:

400g of fish loin (sea bass, arabaiana or golden)

Salt and black pepper to taste

5g butter

10 ml of olive oil

1 clove of garlic

For the crust:

50g butter at room temperature

50g of breadcrumbs

50g of pollen

Salt and black pepper to taste

Preparation

Crust

Mix all the ingredients until you get a homogeneous dough. On a cutting board, spread the dough between two sheets of wrapping paper. Take to the freezer to harden.

Fish

Preheat the oven to 200ºC. Meanwhile, season the fish with salt and pepper. In a non-stick frying pan, with oil, butter and garlic clove, brown the fish for 5 minutes. Next, place the fish in a pan smeared with olive oil. Cut the crust to the size of the fish and overlay it. Bake for 10 minutes and serve immediately afterwards.
